How to sell a used car in Dubai without going to a dealership
In short: There are two ways to sell a car in Dubai without setting foot in a dealership. You advertise it yourself and handle every buyer personally, or you sell on consignment, where Bilgatti Auto does the selling while the car stays in your possession and you keep driving it. Almost every guide to selling a car in Dubai assumes the same first move: you turn up somewhere with the car. A showroom, a buying centre with a ticket queue, a yard where somebody walks around the vehicle with a clipboard and then names a figure. That step is not compulsory. Two routes exist that never require it, and they work in completely different ways.
What are the two routes that skip the dealership?
Sell the car yourself, or have somebody sell it for you without selling it to them.
A private sale is the first. You take the photographs, write the listing, keep it live, answer every message including the ones that go nowhere, decide which stranger is worth an evening, negotiate alone and organise the ownership transfer yourself. Nobody buys the car at a trade price, and no commission comes off the top. What you pay is time, plus the ordinary administrative job of making sure the money has arrived before the keys leave your hand.
Consignment is the second, and it is the one most people have not heard described properly. A consignment sale means a company sells the car on the owner's behalf instead of buying it. Read the last two rows together, because that pairing is the whole point. Neither route asks you to give up the car in exchange for a promise, and neither one costs you money if nobody turns up.
Why does the car stay in your driveway on a consignment sale?

Front, rear, both sides, the interior, the dashboard, the mileage display, and any damage.

Whichever route you pick, that last step is a government matter rather than a private arrangement. In Dubai, changing the registered owner of a vehicle runs through the RTA's "Apply for Changing a Vehicle Ownership" service, which registers the car in the buyer's name. On a private sale, that errand is yours to run. On a consignment sale it is not.
There is one thing a private seller structurally cannot offer a buyer.
